Winter winesAs

the summer leaves us and the Autumn and winter approaches we moved away

from the white and rose and deeply embrace the red ones. as slowly the

warmth and the cool breeze from the sea fades and the rain and colder

times comes we feel the need of a hotter wine and t¡hotter food.
For these edition we choosed four different red wines to be presented and paired for you.
To

start we have our sparkling wine along with two different olive oils

with bread to help we catch the mood and prepares ourselves for what is

to come.
The first with is a 100% Pinot Noir from the

Lisbon region a french grape that is really adapted to the heat of the

weather and the cool breeze of the sea. it is paired with a cheese

vol-au-vent with honey and nuts to enrich the wine.
Our

second choice is Dissidente a Alicante Bouschet, Touriga Nacional,

Syrah from Alentejo developed by Carmin in a two french grapes paired

with a portuguese one. We paired with a Mushroom Velouté with our puff

pastry grissinis of pesto and olive oil.
The next is a

Spanish wine Pagos de Pousada from the region of Bierzo from one of the

most iconic enologist called Raul Perez it is made from a 100% Mencia

grape and is a deep and rich wine that we paired with Alheira ball with

Sriracha maionese. As it is a full bodied wine
To

wrap up Quinta do Arcossó Grande Reserva red made of Touriga Franca,

Tinta Roriz, Tinta Amarela from Tras-os-Montes region. Amilcar the

producer is of the best producer of the region and have strong knowledge

of his grapes, his soil, how the sun, wind affects his grapes and

mastered it in his wines. the wine is paired with a OX tails ragout in a

Bao bread with rucula.And before leaving coffee and Porto are offered.
